4-course menu at Partagé – A young power trio is writing its own rules with a new French-inspired restaurant in City Center

They all started in the restaurant industry at a young age, which explains how such a youthful team of three could have more than 30 years of experience between them. Tobias Lauesen began at Bistro Boheme at 15 and worked his way up to sous chef, spending 9 years there in total. That’s also where he befriended Rebecca Nielsen, who worked front-of-house. When the opportunity came to open a restaurant, they decided to go all in together, along with their friend Jacob Nash, who would lead the bar program. This past November, the trio opened the doors to Partagé, a fresh-faced and French-focused restaurant full of modern-meets-traditional charm.

WHAT YOU GET

Enjoy a 4-course menu at Partagé. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Tuck into a starter, like hand-cut Beef Tartare with ponzu and sesame oil, served atop miso celeriac puree and garnished with crispy potato chips. Taste Riso, a rich and creamy risotto-style dish made with orzo pasta, tomatoes prepared three ways, toasted pine nuts, and parmesan cheese. Bite into barbeque cod with sesame-cauliflower puree and fresh fennel salad. For dessert, indulge in the tart of the day, such as a freshly baked blueberry and raspberry tart, served with vanilla ice cream. The menu can also be made vegetarian.

When you work in the kitchen at Bistro Boheme, you learn how to cook, not how to follow a recipe. That’s why Partagé’s head chef and co-owner, Tobias Lauesen, has no written recipes in his kitchen. He creates the menu based on the season, sometimes changing it daily. That spirit carries throughout the restaurant, with a small, tight-knit staff that is quick to evolve and adapt. Most important to them is that everyone feels at home in the warm and intimate space they’ve created. With the help of original 18th-century wood beams, quirky artwork, and an earthy mauve aesthetic, Partagé has a distinctly welcoming personality that says, ‘Come one, come all.’
