16-course menu at Texture in City Center – Michelin chef brings the heart of France to Copenhagen, earning a nomination for Best New Restaurant of the Year
After mastering his craft in Michelin-starred kitchens around the world – like Marco Pierre White’s Oak Room in London and Restaurant Escale in France – Chef Karim Khuoani was the first to bring a Michelin star to Malmö. Hailing from France, his nearly three decades of experience inform each dish in his new and intimate 20-seat Copenhagen restaurant. Here, Karim and his team of chefs evolve classic French techniques to deliver bold, modern flavors. Opened last October, rumors are swirling of a potential star in June, and it comes as no surprise that Texture has been nominated for Best New Restaurant of the Year by Gastro. Begin with canapes and champagne in the lounge as the chefs continue their tour of refined French gastronomy in the dining room.
WHAT YOU GET
Enjoy a 16-course menu at Texture. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Begin with truffle-infused petit choux, filled with comté sauce and topped with fresh truffle, followed by tuna croustade with seaweed and Oscietra caviar. Next, have frog legs with sage emulsion and oregano and chawanmushi with king crab, bottarga, and herb salad. Savor the signature lobster doughnut topped with Rossini caviar. Eat foie gras marinated in cognac, served with honey gel and quince broth. Taste freshly baked duck fat brioche before moving on to langoustine with chicken vinaigrette, burnt pearl onions, and lavender butter. Feast on steamed turbot with fig purée, kohlrabi flower, and fig beurre blanc. Relish fjord scallop with wild mushrooms and black garlic purée. Ease into dessert like Roquefort cream, served alongside a sable cookie with Havgus cheese, plum, and port wine. Indulge in Mayan red chocolate tart served with blueberry and caviar, matcha truffle with pistachios and white chocolate, and choquette filled with vanilla chantilly. End your meal with a warm madeleine served with honey.

Texture is the next chapter in chef Karim Khuoani’s Michelin-starred journey. After working in kitchens around the world, he earned Malmö’s first Michelin star at Ambiance à Vindåkra, and then another at Sture a year later. Karim and co-owner Albert Reffelt Dalum created Texture to bring a taste of the refined French kitchen to Copenhagen. While Albert manages the intimate dining room, Karim leads the team of chefs. Named after Karim’s son’s fascination with the textural elements of food, the kitchen of Texture often sees both father and son striving to meet culinary perfection by refining the taste and texture of dishes. The result is a masterfully executed culinary destination and contender for Karim’s third Michelin star.
